Gobi Bhatt ( Cauliflower pulao )


Gobi Bhatt ( Cauliflower pulao ) is one of the maharastrian recipe. Bhatt means rice in Marathi language. Very simple to make & very tasty. You can add finely chopped cubes of carrot & some peas to add more colour to this dish.


Ingredients :
Rice 2 cups

Cauliflower 1 cup florets
Onions 1 no ( chopped in medium size cubes )
Green peas 1/2 cup
Carrots 1/2 cup ( finely chopped in cubes) (optional)
Fresh corriender leaves for garnishing
Fresh coconut for garnishing ( optional )
Ginger/garlic paste 1 tsp
Green chillis 4 nos

Tez patta 2 leave
Whole black peppers 2-3 nos
Turmeric powder (haldi) 1 tsp
Mustard seeds 1 tsp
Asafotida (hing) a pinch
Garam masala 1 tsp
Oil 2 tsp
Salt to taste
Water 2 cups


Method :

1. Wash the rice thoroughly & keep aside.
2. Make a coarse paste of green chillis.
3. In a pan heat oil add mustard seeds & allow them to crackle. Add hing, tez patta & black peppers.
4. Add chopped onions & saute. Add ginger/ garlic paste & green chilli paste. Saute till onions are translucent.
4. Add turmeric & cauliflower (Gobi) &carrots. Mix well.
5. Add rice & saute the rice for 5 mins & then add water.
6. Add salt & mix well. Cover with lid & allow the rice to cook. Check if water required in some time.
7. Add green peas & sprinkle the garam masala when the rice is half done. Mix well and let the rice cook completely.
8. Garnish with chopped corriender leaves & grated fresh coconut & serve. You can also add some pure ghee this gives more taste.

Tip :

  • Always saute rice while cooking & before adding water as this helps the rice to cook well & adds more taste to the dish.
  • To avoid basmati rice to break while cooking always soak it atleast 1/2 an hour in water the dry it on a flat plate for some time. Also add a little lime juice.
