Khasta Kachori Chat




For the dough :

Maida (All purpose flour) 1 cup
Salt to taste
Oil or ghee 1 tsp
Water to knead the dough

For filling :

Spilt yellow moong dal 1/2 cup ( soaked 5-6 hours)

Cumin seeds 1/2 tsp
Red chilli powder 1 tsp
Asafotida ( hing ) a pinch
Salt to taste
Fenel seeds (sauf) 1/2 tsp ( roasted)
Cumin powder 1 tsp
Corriender powder 1 tsp
Amchur powder 1/2 tsp

Ginger-garlic paste 1 tsp
Green chillis 2 nos ( finely chopped)

For making kachori chat :

Potatoes 1 no ( boiled and chopped in small size cubes)
Onions 1/2 cup ( finely chopped)
Tomatoes 1/2 cup ( finely chopped)
Fresh corriender leaves for garnish

Nylon sev for garnish

Curd 1/2 cup
Green chutney
Tamarind and date chutney

Method for making dough :

1. In maida add salt, some ghee and knead to a nice soft dough and rest it for 15-20 mins cover with a damp cloth.

Method for making the filling of kachori :

1. Heat oil in pan or kadhai add cumin seeds and allow them to crackle. Add hing.
2. Add green chills, ginger-garlic paste and sauf. Mix well.
3. Add the moong dal and all the spices and mix well.
4. Sprinkle little water and cover with the lid a
nd let it cook for 5 minutes.
5. Remove from the pan and gring this mixture coarsly in a grinder.
6. The filling for kachoris is ready.

For making Kachori :

1. Knead the dough once and make equal size balls.
2. Take the ball press it lightly and then roll it a little with a rolling pin by applying little maida as an when required.
3. Roll it to a puri size. Place 1 tsp moong dal filling in the center.
4. Now pull the edges together and let the filling be wrapped in the center.
5. And again roll it a little carefully, do not let the filling come out.
6. Repeat this process for all the kachoris.
7. Heat oil to a smoky point and lower the flame.
8. Then fry the kachoris on medium heat, the kachoris take time to cook completely.
9. Let them fry till they are nice light golden brown.

For making kachori chat :

1. Cool down the kachori.
2. Ina bowl take some curd add very little water and salt and beat it a little.
3. Place one kachori in a plate and break a hole in the center.
4. Top it with some chopped boiled potatoes, curd, green chutney, tamarind chutney.
5. Garnish with onions, tomatoes, corriender leaves and nylon
sev.
5. Serve immediately.
