Paneer Tikka Masala is curry based dish with chucks of seasoned paneer added to spicy tomato based gravy.
Ingredients :
For Paneer Tikka Marination:
Paneer ( cottage cheese ) 1/2 packet
Curd 1/2 cup
Kashmiri red chilli powder 1 tsp
Corriender powder 1/2 tsp
Cumin powder 1/2 tsp
Tandoori paneer tikka masala 1 tsp
Ginger/garlic paste 1 tsp
For gravy :
Tomatoes 6 nos
Ginger/garlic past 1 tsp
Kashmiri red chilli powder 1 tsp
Whole garam masa few
Corriender powd 1/2 tsp
Cumin powder 1/2 tsp
Kasuri methi pinch
Method :
For Marination of Paneer :
1. Drain all the water from the curd.
2. In bowl mix curd with all the ingredients mentioned below the ingredients of marination.
3. Add paneer cubes and mix well.
4. Keep in the refrigerator.
5. Marinating overnight gives very good taste.
6. Minimum marination time is 6 hours at least.
Once the paneer is marinated for suffient time, remove from the refrigerator and let it stand for sometime. In a nonstick pan add little oil and coat the pan completely. On a medium flame shallow fry the paneer cubes until light golden brown form both the sides.
If any marinated mixture is left, keep aside for later use.
Shallow fried Paneer Tikka
For Gravy :
1. Chop tomatoes and keep aside.
2. Use the same pan in which paneer was shallow fried as this add taste to the gravy.
3. Heat oil add whole garam masala, ginger/garlic paste and tomatoes. Mix well.
4. Saute the tomatoes well. Add all the spices and saute till you can see the oil separated.
5. Cool the masala for few minutes and make a fine paste in a grinder.
6. Heat very little oil in the same pan add the marination mixture left, add the gravy and little water, add kasuri methi and mix well.
7. Add panner tikka and salt and let it cook for 5 minutes.
8. Garnish with corriender leaves and grated paneer.
9. Serve hot with Nan or roti.
