Ciabatta Veg Chesse Grill Sandwich

I had some Ciabatta bread and few veggies at home. Wanted to try something new as I love ciabatta  bread. Hence came up with this simple and quick recipe. I have griddled the sandwiches on the grilling pan or even they can be toasted. Hot sandwich always tastes great. You can add as many veggies you like to make it healthier. It tasted great and real quick to make. Great for lunch tiffins, small tea party.
Ingredients :

  • 6 nos Ciabatta  bread
  • 1/2 cup chopped green capsicum
  • 1/2 cup chopped tomatoes (remove the seeds)
  • 1/2 cup chopped mixed bell peppers (optional)
  • Few broccoli florets chopped finely
  • 1/2 cup chopped onion
  • 1/2 cup corn
  • Few chopped black olives
  • 1/2 Mozeralla chesse
  • Red pepper to taste
  • Black pepper powder to taste
  • Salt to taste
  • Italian herbs to taste
  • Butter as required for roasting.

Method :



1. In a bowl mix all chopped veggies and spices and mix well.







2. Open the ciabatta  bread and place the filling as shown in the below picture.
3. Close the sandwich.
4. Heat the grill pan add little butter. Place the sandwich on the pan. Apply some butter on the top as well. Press the sandwichs with laddle while roasting.
5. Grill both the side till light golden brown or as crispy as you want.
6. Serve hot with tomato ketchup, chips or with fries as you like. 
7. Enjoy!
