Aap Ki Rasoi Se / From your Kitchen : Baked Eggs with Herbs - Recipe by Apoorva Patwardhan

Sometimes we feel like taking a break from regular fried eggs, omelets and hard boiled eggs. Try this basic version of baked eggs with herbs and surprise your taste buds. Although this is nothing new and is easily available in restaurant,  but anything homemade is anytime better as we can control what went into it, you can add meat, veggies or garlic to take this recipe to next level and make it your own.

Ingredients :

  • 3 fresh large eggs
  • 1/3rd cup any tomato based sauce ( either marinara or tomato basil sauce but not ketchup) also the amount may vary as per size of your baking dish,  we need to spread it at the bottom in a thin layer
  • Pinch of paprika
  • Pinch of cayenne pepper
  • 1/4th tsp of chopped fresh thyme, oregano and parsley each ( reduce the amount to 1/8th tsp or pinch if you are using dried herbs as they are much stronger)
  • Salt and pepper to taste
  • Fresh whipping cream 2 tbsp ( to drizzle over the top you can use as much or as less as you like.Grated parmesan cheese - to sprinkle and cover the top
Method :

1. Preheat oven at 400 degree f.
2. Spread tomato sauce at the bottom of your baking dish and sprinkle paprika as much as you want.
3. Make little pockets by sliding sauce to the corners of baking dish, and break 3 eggs into these pockets.
4. Sprinkle salt, pepper, herbs and cayenne pepper.
5. Drizzle fresh cream and cover it with cheese.
6. Bake the eggs on 400 degree f for 12 min for medium done yolks, if you want fully cooked yolks bake them for 15 min.

7. Serve with toasted bread if you like. Enjoy homemade baked eggs.
