I proudly present my Mothers Recipe. Its a Maharastrian recipe. Its a simple sabji quick to make and tastes great. This is one of my favorite sabji which my Mom cooks for us. The simple and minimum ingredients makes it delicious. Lets go ahead with the cooking.

Ingredients :
Method :
1. Heat oil in a pan, add must mustard seeds and let them crackle.
2. Add green chilli, fenugreek seeds,poppy seeds, hing, turmeric, red chilli powder, cumin powder. Mix well. Keep the flame low to avoid burning of spices.
3. Add the chopped pumpkin and mix well. Add 1/2 cup of water and cover the pan with the lid.
4.Once the sabji is half done add salt, jaggery and some more water. Cover and let it cook completely.
5. The sabji should not be dry so adjust the water level, at the same time not too watery.
6. Once cooked garnish with fresh corriender leaves and grated coconut. Coconut is optinal.
7. Serve with chapati.
8. Enjoy!

- 2 cups for pumpkin chopped in cubes and skin removed
- 1 small green chilli chopped
- 1 tsp mustard seeds
- 1 tsp of khuskhus / poppy seeds
- 1 tsp methi dana / fenugreek seeds
- 1 1/2 tsp red chilli powder
- 1/2 tsp turmeric powder
- Pinch of hing / asafotida
- Gud / Jagger to taste
- 1/2 cumin powder
- 1 1/2 tbsp oil
- Salt to taste
- Fresh chopped corriender leaves for garnishing
