Aap Ki Rasoi Se / From your Kitchen : Instant Carrot Pickle : Recipe by Gauri Pimprikar

Ingredients :

1 Cup fresh thin chopped carrot.
Finely chopped 4-5 garlic clove
3 table spoon lemon juice
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tablespoon crushed Fenugreek seeds (optional)
1/4 tbs. asafetida ( Hing Powder)
1/2 tbs  Red Chili powder (Degi mirch or less hot chili powder)    
1/4 tbs  Turmeric powder  
Pinch of suger
2 nos green Chili
2 tbs Chopped Coriander leaves
1/2 tbs Jeera powder             
Salt to taste


1) Wash and peel the carrot before chopping in small and thin cubes.
2) Take chopped Carrot in mixing bowl.
3) Then add finely Chopped Garlic, lemon Juice, Green Chili, coriander leaves and Jeera Powder.
4) Mix well all the ingredients and keep it aside.
5) Heat the Oil in small pan. Add Cumin seeds, mustard seeds. Allow it to crackle then add asafetida,crushed fenugreek seeds,(Turn off your stove) add red chili powder and turmeric powder and immediately pour this tadka to carrot mixture.(other wise red chili & Turmeric powder will burn. )
6) Add Sugar and salt to taste and again mix well
7) Keep refrigerated till serving.
8) Enjoy your instant home made Carrot pickle with any paratha or your favorite food.

Note : This pickle stays fresh for 4-5 days and if you add more lemon juice stays fresh up to seven days.
